Zucchini Carb

Is zucchini carb low and keto-friendly? 1 medium raw zucchini  has 2.6 grams of net carbs and 3.9 grams of total carbs.

Zucchini have a great nutrition value, they are rich in vitamins C and B6, and also contain vitamin A, thiamin and folate. This vegetable is also a good source of potassium and manganese which are important minerals for our body.

Vitamin C is essential for the immune system, it also helps to repair body cells and as a result delays cells aging.

Zucchini are rich in antioxidants. They help to remove the body’s free radicals and have an anti inflammation effect. Zucchini have a lutein component which improves skin health by reducing inflammation.

Zucchini carb is low and they are very popular on keto. There are recipes where this vegetable acts as a substitute for pasta.

Baked Keto Zucchini

As zucchini carb is low you can use this vegetable for making this great main meal.

  • 500 grams of minced beef
  • 2 zucchini
  • 2 tomatoes
  • Olive oil
  • 1 garlic
  • 1 onion
  • Salt
  • pepper 
  • 3 tablespoons of grated cheddar cheese 
  • a bit of parsley for decoration
  1. Cut zucchini in two by length and remove the inner part, put the inner part in a bowl. Zucchini will serve as a share where you will put meat later on.
  2. Bake zucchini in the oven for about 12 minutes.
  3. Cut garlic and onion and fry them together with the inner part of zucchini. Add a bit of salt and pepper.
  4. Once garlic and onions are yellowish color and soft, add beef to the frying pan.
  5. Mix well and fry until beef gets dark brown color.
  6. Cut tomatoes into small pieces and add to the meat sauce. Fry all together for about 5 minutes.
  7. Add meat to zucchini forms. Put grated cheese on top and bake for about 12 minutes.
  8. You can add parsley on top of zucchini once they cool down as decoration.

Zucchini Carb Low Noodles

Zucchini noodles are really easy to prepare at home. They are keto-friendly and cook really fast.

All you need is a peeler. Noodles frying takes not more than 5 minutes and you can add cheddar cheese to it.

You can also use zucchini noodles raw as part of the salad. Add some tomatoes, feta cheese, seafood or egg to your taste and you get a keto lunch.

Zucchini noodles also can be a good side dish or garnish to your meat or fish.

Keto Zucchini Chips

  • 2 zucchini
  • Olive oil
  • Salt and pepper
  1. Cut zucchini into very thin circles (similar to potato chips)
  2. Add salt to the slices, then rinse and dry zucchini. 
  3. Sprinkle olive oil on the cut slices (oil makes chips crunchy)
  4. Add spices to taste, such as salt, pepper
  5. Bake slices in the oven for about 15 minutes.
  6. Turn the chips, add more oil, salt and pepper.
  7. Bake the other site for another 15 minutes.

Zucchini chips can be a healthy snack or a side dish (garnish) for your main keto dish.

Zucchini Carb Low Lasagne

  • 0,5 kg zucchini
  • 500 gram of minced beef
  • 300 grams of tomatoes
  • 1 cup of mozzarella shredded
  • 85 grams of mozzarella
  • Olive oil
  • Salt
  • pepper
  1. Slice zucchini into thin long slices.
  2. Put salt on the slices and leave them to absorb salt for about half an hour
  3. Mix beef, cheese, add salt and pepper.
  4. Take a glass baking dish, put a bit of olive oil and lay the first layer of zucchini on it.
  5. Put the second layer which is the meat layer
  6. Slice tomatoes, add a bit of salt to them.
  7. Put the third layer which is tomatoes layer
  8. Repeat layers in the same order: zucchini, meat, tomatoes until all food is in the tray.
  9. Last layer is shredded mozzarella
  10. Bake lasagne for 40 minutes
